With emergence of winters carrots are available in market in large amounts.
Today will make carrot (gajar) halwa.
We have already prepared halwa on gas but today we will make it in microwave.
Let’s see what all ingredients are required for making gajar halwa.
Carrots - 1 kg (washed)
Mawa - 250 grams
Sugar - 250 grams (more then 1 cup)
Milk - 1 cup
Cashew nuts - ½ cup
Raisins - ¼ cup
Green cardamom - 4-5
Ghee - 2 tbsp
For making gajar halwa in microwave peel carrots and then grate them.
After peeling remove the stalk from both sides.
Like wise peel all carrots.
Now grate the carrots.
Use food processor or shred carrots manually.
Cut into small pieces and place in mixture jar.
Take out shredded carrots in microwavesafe bowl and also add milk.
Firstly microwave mawa for 2 minutes.
Place bowl in microwave and roast for 1 minute.
Now crumble mawa and stir with help of a spoon.
Microwave mawa for 1 more minute.
Now microwave shredded carrot for 3 minutes.
Meanwhile cut cashew nuts and peel cardamom for making powder.
After 3 minutes take out bowl and stir the carrots.
Place the bowl back and microwave for 3 more minutes.
Check again and stir after 3 minutes.
Now mix sugar and ghee into it.
Now microwave again for four more minutes.
After 4 minutes take bowl and stir nicely.
If cooking on gas we still have to stir it after every 2-3 minutes.
Now add cashew nuts, raisins and mawa in the halwa.Mix really well.
Place bowl back and microwave for 4 more minutes.
After four minutes take out bowl and stir the halwa.
Microwave for four more minutes again
Halwa is now ready, mix cardamom powder into it.
Halwa prepared in microwave remains little juicy.
Take out halwa in another bowl.
Garnish with some cashew nuts.
Tempting and luscious microwave gajar halwa is ready.
We have used mawa for making halwa but you can use condensed milk also.

Microwave for 8 minutes, check and stir after 4 minutes. Carrot halwa will be ready. Thoroughly mix green cardamom in the halwa and transfer in a bowl. Serving: 4.Garnish this luscious carrot halwa with cashews and serve it warm or chilled. Suggestion If you want to skip mawa then add condensed milk instead of it. Take a tin (400 grams) of condensed milk and add it to the halwa and skip adding sugar because condensed milk is already very sweet.
